I'm having problems with a design I have to finish and I need some help: where can I find online diagrams of pull to lock / pull to release mechanism ?

That's the mechanism for modern automobile emergency brakes. You should be able to find it.

It is IF you trip the release. In fact a hand brake lever is just a lever with a trip lock. You do not pull the hand brake lever to release the brake, you pull the hand lever only to release the strain on the trip lock.

A ball point pin is an example of a push to lock and push to release. If you were to put a lever in front of the button you would have a true pull to lock and pull to release device.

With some imagination you could come up with a fresh device that is a pull to lock and pull to release device.
