Just make sure you match the die tolerance class to the mating parts tap tolerance class.
Hey. Simple question with a simple answer I think. I have a part with a M18 threaded hole.
I need to add an external thread to a aluminium bar for the two parts to screw together. I cant
find any charts, do I just use an M18 die on the bar?

"Threaded bars," plural, raises a caution from me.
Depending on the length of thread and quantity of bars, it may be worth investing in a die-box and M18-inserts. A hand die is not really intended for long lengths of thread as they clog quickly and need to be constantly reversed to chip-break. Especially so in the lower-number grades (3, 5 etc) of aluminum.
